Because of the high heat process, a caramelized flavor is produced.
Evaporated milk must contain at least 6.5% of milk fat and at least 16.5% milk solids. Vitamin D is added to the evaporated milk before it is canned. It must be sealed in a container to prevent spoilage.
Evaporated milk is used as creamer in the Netherlands and Germany. In Malaysia and Singapore, it is usually added to brewed coffee and tea. Evaporated milk can be used to make silky smooth mac and cheese, mashed potatoes, and cheese sauce for French fries and nachos. It is also an ingredient in homemade ice cream.
Regular milk is usually cow’s milk with no content removed or added to enhance its flavor. After harvesting milk from cows, milk is refrigerated and agitated to ensure that the milk fat does not separate from the milk. It is then tested for bacteria count, protein, and milk fat content. It must meet certain quality standards before being further processed. Milk then undergoes the processes of pasteurization, homogenization, and packing. Its shelf life is usually seven days from production date.
Regular milk contains 3.4% protein, 3.6% fat, and 4.6% lactose. During breakfast, it can be consumed with cereal. In some Asian countries, milk and raisins are added to cooked brown rice to make rice pudding. Milk can be blended with banana or berries to make a delicious shake.
